Perfect Protein Salad serves 8 to 10
Cook ¾ cup wheat berries until tender. Cool under running water.
Marinate the wheat berries plus 1 can of drained chick peas in:
1 tsp. dry or 1 tbsp. chopped fresh dill
½ tsp dry mustard
½ cup cider vinegar
½ cup mayo
Juice of one lime or lemon
A dash of dried basil
2 tbsp. dry white wine
1/3 cup chopped parsley
2 cloves crushed garlic
While beans are marinating and chilling, dice:
1 lg. carrot
1 sm. Red onion
1 green pepper 1 stalk of celery
Combine everything with 1 cup cottage cheese.
This is amazingly delicious!
